How to Cook Chicken in an Air Fryer – Honestly, I Messed This Up So Many Times

So here's the thing.
I wasn't good at this at all. Not even a little.
My air fryer made me look bad for months. Dry chicken. Burnt skin. Raw inside. You name it.
I kept trying though. Kept messing up. Kept learning.
Now? I finally got it.
Different cuts need different times and temps. That's really the whole secret.
Here's what I figured out. Hope it helps you.

Honestly, Do These Things First

I learned these the hard way. So you don't have to.
Dry the chicken
For real. Use paper towels. Pat it down good. Wet skin never gets crispy. I tested this. A lot.
Don't pack the basket
Leave some space around each piece. The hot air needs room to move. Too much chicken? You'll get steaming instead of crisping. Trust me on this.
Get a meat thermometer
I used to guess. That was stupid. Don't be like me. Cook until it hits 74°C (165°F). That's it.

Chicken Wings – 20 to 25 Minutes

Wings are what most people make first. They're good.
What you need:
  • 8-10 wings
  • About 1 tbsp oil
  • Salt, pepper, garlic powder, paprika
Here's what I do:
  1. Dry the wings. Like really dry them.
  2. Toss with oil and spices.
  3. Put in basket. One layer. Don't pile them up.
  4. Cook at 190°C (375°F) for 20-25 minutes.
  5. Shake the basket halfway through.
  6. Check temp – 74°C (165°F).
Want them extra crispy? Last 2-3 minutes at 200°C (400°F). Works every time.

Whole Chicken – 45 to 50 Minutes

I know. A whole chicken sounds crazy. But it fits. You need a chicken about 1.5-2 kg. Make sure it fits your basket before you start though.
What you need:
  • 1 whole chicken
  • 1 tbsp oil
  • Salt, pepper, garlic powder, onion powder, paprika
Here's what I do:
  1. Dry the chicken. Inside too. Don't skip this.
  2. Rub oil all over.
  3. Season it. Use your hands. Don't be shy.
  4. Tie the legs with string. Helps it cook more even.
  5. Put it in the basket breast side down.
  6. Cook at 180°C (360°F) for 30 minutes.
  7. Flip it carefully. Tongs work best.
  8. Cook another 15-20 minutes.
  9. Check the thigh – 74°C (165°F).
The top gets too dark sometimes. Just cover it with foil.
A large capacity air fryer works best for this. More room to work with.
Let it rest: After cooking, just wait a few minutes. The juice stays inside. Cut right away and it all runs out onto your cutting board.
Clean the thing: Grease builds up over time. Next batch you'll get smoke. A good air fryer with non stick coating helps but you still need to wipe it down.
Ok. Let's actually cook something.

Chicken Breast – 12 to 15 Minutes

Breasts dry out fast. So watch the clock carefully.
What you need:
  • 2 boneless skinless breasts
  • 1 tbsp oil
  • Salt, pepper, garlic powder, paprika
Here's what I do:
  1. Pound them to even thickness. About 2 cm.
  2. Dry them. Then oil them.
  3. Season both sides.
  4. Put in basket. Single layer.
  5. Cook at 190°C (375°F) for 12-15 minutes.
  6. Flip halfway.
  7. Check temp – 74°C (165°F).
I try to pull them at 73°C (163°F). They keep cooking while resting.
A digital air fryer with timer makes this so much easier honestly.

Chicken Thighs – 16 to 18 Minutes

Thighs are more forgiving. Hard to mess these up.
What you need:
  • 4 boneless skinless thighs
  • 1 tbsp oil
  • Salt, pepper, garlic powder, smoked paprika
Here's what I do:
  1. Dry them.
  2. Oil and season both sides.
  3. Put in basket. Skin side up if they have skin.
  4. Cook at 190°C (375°F) for 16-18 minutes.
  5. Flip halfway if you want. Not really necessary.
  6. Check temp – 74°C (165°F).
For bone-in thighs with skin? Cook skin down for 10 minutes. Then flip. Then 10 more at 180°C (360°F). Skin gets really crispy that way. So good.

Chicken Drumsticks – 20 to 22 Minutes

Drumsticks are one of my favorites. They just work.
What you need:
  • 6 drumsticks
  • 1 tbsp oil
  • Salt, pepper, garlic powder, paprika
Here's what I do:
  1. Dry them.
  2. Oil and season all over.
  3. Put in basket. Single layer.
  4. Cook at 190°C (375°F) for 20-22 minutes.
  5. Flip halfway.
  6. Check thickest part – 74°C (165°F).
Want crispier skin? Last 2-3 minutes at 200°C (400°F).
A large capacity air fryer fits 6-8 drumsticks pretty easily. Great for family dinner.

Chicken Tenders – 8 to 10 Minutes

Kids love these. Super quick. Super easy.
What you need:
  • About 500g tenders
  • 1 tbsp oil
  • Salt, pepper, garlic powder, paprika
Here's what I do:
  1. Dry them.
  2. Oil and season.
  3. Want them breaded? Dip in egg then breadcrumbs mixed with seasonings.
  4. Put in basket. Single layer.
  5. Cook at 190°C (375°F) for 8-10 minutes.
  6. Flip halfway.
  7. Check temp – 74°C (165°F).
Don't crowd the basket. Cook in batches if you have to. It's worth the extra time.
A compact air fryer works fine for tenders.

A Simple Recipe That Works

Personally, I use this marinade all the time for wings or thighs.
What you need:
  • 1 kg chicken
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • Juice of 1 lemon
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
Here's what I do:
  1. Dry the chicken.
  2. Mix everything except chicken in a bowl.
  3. Add chicken. Coat it well.
  4. Let it sit for 15-30 minutes. Longer if you have time.
  5. Cook using the times up above.
  6. Add fresh parsley at the end if you have some.
Good with rice or roasted veggies.

Problems I Had and How I Fixed Them

Skin not crispy?
For me, that usually means I didn't dry the chicken enough. Or the temp was too low.
Chicken dry?
Overcooked. I use a thermometer every time now. Pull at 73°C.
Uneven cooking?
Too much stuff in the basket. I leave more space now.
Sticking to basket?
Spray oil on the basket first. A good air fryer with non stick coating helps too.
Smoke coming out?

  • Temp up to 200°C (400°F)
  • Timer that shuts off automatically
  • Non-stick basket that's actually easy to clean
